Gochujang Fried Rice

Ingredients

  • 2 tbsp vegetable oil
  • 2 tsp minced garlic
  • 2 tsp finely chopped ginger
  • 2 large eggs
  • 1/2 cup sliced mixed bell peppers
  • 1/2 cup cubed carrots
  • 1/4 cup gochujang
  • 2 tbsp soy sauce
  • 4 cups cooked Dubar Rice
  • 2 tbsp chopped green onions
  • 1 tsp toasted sesame seeds

Instructions

  1. Heat 2 tbsp vegetable oil in a large skillet over high heat.
  2. Once the oil is hot and shimmery, add 2 tsp minced garlic and 2 tsp finely chopped ginger and saute for 10-12 seconds.
  3. Break 2 eggs in the skillet and scramble them.
  4. Add ½ cup sliced mixed bell peppers and ½ cup cubed carrot and saute for a minute.
  5. Add ¼ cup gochujang paste and cook for 30-40 seconds.
  6. Now add 2 tbsp soy sauce and 4 cups of cooked rice and mix everything well.
  7. Garnish with 2 tbsp chopped green onions and 1 tsp toasted sesame seeds. Serve hot.
